Real Spaghetti alla Carbonara is a revelation to those of us who’ve grown up in the lands of Olive Garden and the like. Even when you eat carbonara at a mom and pop type restaurant it’s often made to the North American idea of what this dish is. You might be used to seeing carbonara brimming with cream, dotted with peas, chicken and ham or other nonsense. Instead, simple flavours come together in a rustic dish that warms the heart and fills the belly.

I first had a real carbonara in a tiny village in Italy called Corniglia. It was quickly followed by a few more before I left Italy and by the time I was home I was desperate to recreate the dish. Thankfully ages ago ‘TheJizzer’ added his. Add in the fact that I’d made my own Pancetta recently and this dish has been a fairly regular feature since.

I will note, you CAN make this with (ideally peppery) bacon and still get most of the effect but even if you’re not up to making your pancetta I heartily recommend grabbing some from a deli to try the real thing.

Ingredients

  • 1 lb. Spaghetti
  • 2 tbsp. Olive Oil
  • 1/4 lb. Pancetta
  • 4 cloves Garlic, minced
  • 2 lrg Eggs
  • 1/4 lb./1 cup grated real Parmesan
  • Italian Parsley (garnish)
  • Black Pepper (fresh cracked)

Method

Start your pasta cooking (or later if using fresh)

Heat up your olive oil and add your chopped pancetta, the fat will start to render. Once it does add your garlic and get everything nice and aromatic.

Mix your cheese and eggs well

Stir well to combine the cheese and eggs, check that your pasta is finished.

Add your pasta to the pancetta and garlic then toss it together. Once it’s mixed up pull it from the heat, then mix in your cheese/egg mixture vigourously (you don’t want to scramble the eggs, just have them cook as you mix them in and coat the pasta.

Once everything is top with a ton of fresh ground black pepper then garnish with a bit of chopped parsley.
